🥪 Ingredients:

  • 1 medium eggplant (aubergine)

  • Olive oil

  • Salt & pepper

  • Dried oregano or Italian herbs

  • 2–3 tbsp harissa hummus

  • 1 tbsp garlic mayo (vegan or regular)

  • A handful of fresh arugula (rocket)

  • 1–2 ripe tomatoes, sliced

  • Your favorite bread (toasted for extra crunch)

🔥 How to Make It:

  1. Roast the Eggplant:
    Slice the eggplant into 1 cm thick rounds. Brush with olive oil, sprinkle with salt, pepper, and herbs. Roast at 200°C (390°F) for 20–25 minutes until golden and soft.

  2. Prep the Spread:
    Mix garlic with mayo or use garlic-flavored mayo. Optionally, add a bit of lemon juice for extra zing.

  3. Toast the Bread:
    Use ciabatta, sourdough, or your favorite sandwich bread. Toast until crispy.

  4. Assemble the Sandwich:
    Spread harissa hummus on one side, garlic mayo on the other. Layer roasted eggplant, tomato slices, and a handful of arugula.

  5. Enjoy Immediately!
